French bread, sliced
1 cup chopped tomato
1/2 cup chopped fresh basil
1/2 cup sliced black olives
1-2 garlic cloves, pressed
7 -8 anchovy fillets
5-6 tablespoons olive oil
Salt and pepper to taste
Preheat the oven to 325 degrees F.
Place the slices of French bread on a baking sheet and lightly brush with 4 tablespoons of the olive oil.
Bake until lightly golden and crispy, about 5-7 minutes.
Combine together tomato, basil, olives, garlic and olive oil (2-3 tbs).
Season with salt and pepper.
Top bruschetta slices with the tomato mixture and anchovies.
Serve warm or cold.
