1/2 cup sugar
1 cup gluten-free baking flour
1tbs baking powder
1/2 cup melted unsalted butter
1/2 cup dried apricots
Preheat oven to 375 degrees F.
Mix the sugar, melted butter, eggs and mashed bananas.
In another bowl, mix together the flour and baking powder.
Add the banana mixture to the flour mixture and stir until combined.
Add dried apricots, mix well.
Pour batter into prepared pan and bake 40-45 minutes, until a toothpick inserted in the center comes out clean.
Remove bread from pan, invert onto rack and cool completely before slicing. Enjoy!
