3 ripe medium avocados
2 cups whole wheat white flour
1/2 cup sugar
1/2 cup vegetable oil
2 tablespoons lemon juice
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Preheat oven to 350F.
Combine the flour, baking powder and baking soda in a large bowl.
Mash the avocados.
Mix the sugar, eggs, oil, lemon juice and mashed avocado until combined.
Pour the avocado mixture into the dry ingredients, stir to mix well.
Pour batter into prepared pan (spray before with non stick baking spray).
Bake at 350 degrees for 50 min-1 hour.
Allow to cool on a wire rack completely before slicing.
