2 medium beets, cooked, peeled and chopped
2 medium potatoes, cooked, peeled and chopped
1 cup shelled edamame
2 cups chopped cucumber
1/3 cup chopped sweet onion
3-5 tablespoons olive oil
2 tablespoons balsamic vinegar
Pink salt and freshly ground pepper
Mix together beets and the rest of ingredients with olive oil and balsamic vinegar.
Season with salt and pepper.
Refrigerate until ready to use.
