2 medium sweet potatoes, chopped into cubes
1 medium sweet onion, diced
2-3 cloves garlic, pressed
2 cups cooked lentils (I use steamed lentils from Trader Joe's)
2 cups chopped fresh broccoli (cut into 1 1/2-inch pieces)
3 tablespoons vegetable oil
12 cups vegetable broth or water
pink salt and freshly ground pepper to taste.
Heat vegetable oil in a large stock pot and start browning sweet potatoes.
Add onion, cook and stir about 15 minutes.
Stir in garlic and cook for 1 minute.
Add lentils and broccoli.
Pour in the broth or water and bring it to a gentle boil.
Season with pink salt and pepper.
Cook for 10-15 minutes, or until the sweet potatoes are starting to get tender.
Serve in bowls garnished with 1 teaspoon of butter.
