300 grams/2 cups chopped broccoli
1 cup white whole wheat flour
1/2 cup vegetable oil
1/2 cup shredded cheese (I used mild cheddar)
2-3 tablespoons mascarpone cheese
1 Tablespoon sugar
1/4 teasppon baking powder
1/2 teaspoon salt
Preheat oven to 400 degrees F. Grease a 9 inch pie plate.
Blanch the broccoli in salted boiling water for 2 minutes. Drain, and pat dry.
Whisk together the eggs, oil, sugar, salt and mascarpone cheese.
Add the flour with baking powder, mix until smooth. Pour mixture into pie plate.
Arrange the broccoli around the crust, florets pointing up.
Bake for 20 minutes, top with cheese and return to oven just until cheese is melted (about 10 minutes).
Serve hot or cold.
