1 boneless turkey breast (2.5 lb)
1 cup cubed bacon (salo)
2-3 bay leaves
5-6 garlic cloves, 3 sliced, 3 pressed
1/3 cup cilantro flakes
1/4 cup olive oil
Pink salt and freshly ground ground pepper
Using a sharp knife, make cuts and put inside the meat small pieces of bacon and slices of garlic.
Mix together the olive oil, pressed garlic, cilantro flakes, salt, pepper and spread all over the meat.
Cover, and refrigerate for 24 hours.
Heat oven to 450ºF.
Place turkey, skin side up, on rack in large shallow roasting pan, cover with foil and bake for 1hr 30 min.
Carve into thin slices and serve with gravy, if desired.
