1 can (14 OZ) light coconut milk
1 cup frozen cherries
1/4 cup honey
1/4 cup unsweetened cocoa powder
Combine coconut milk, honey and cocoa powder in a blender, and blend until smooth and creamy.
Transfer to a freezer-safe container add cherries, mix well.
Place in the freezer for 3-4 hours, or until firm.
If your ice cream gets too firm in the freezer, allow it to thaw at room temperature for 15-20 minutes before serving.
