5 OZ Goat cheese
2 big or 3 medium onions, thinly sliced
1/3 cup dried cranberries or raisins
1/3 cup almonds or walnuts
3-5 tablespoons raw honey
3-4 tablespoons butter or vegetable oil
Pink salt and freshly ground pepper
In a medium nonstick skillet, heat butter or oil over medium-high heat.
Add onions and cook uncovered for 10-15 minutes, stirring every 3 to 4 minutes.
Add honey, cranberries/raisins and almonds/walnuts.
Season with salt and pepper.
Cook and stir for another 5 minutes.
Stir well and then let cool.
Spoon the onion mixture on top of the cheese and serve with crisp buttery crackers or tortilla chips.
