Halibut and Rice Ceviche. Fancy dinner at home...

1 lb fresh pacific halibut, diced into small pieces
2 cups cooked jasmine rice
1 cup diced cucumber
1/2 cup diced white onion
1 tablespoon chopped fresh mint
2 oranges, 1 diced, 1 squeezed
2-3 tablespoons chopped green onions
2 cloves garlic, pressed
2-3 lemons, squeezed, enough to cover the halibut
1/4 cup red caviar (optional)
Pink salt and freshly ground pepper to taste
Place the halibut, orange, cucumber, onion, spring onion, mint and garlic in a glass or non-reactive bowl.
Season with salt and pepper.
Add the orange and lime juices, mix well.
Let the ceviche marinate refrigerated for about two hours.
Once the ceviche is done, drain the all liquid and spoon the mixture evenly over rice.
Garnish with red caviar (optional).
