This sweet and savory side dish is perfect for the holidays and loaded with Fall colors and flavors!
2 cups diced pumpkin
1 medium onion, sliced
1/2 cups prunes, washed
1/4 cups raisins
2-3 tablespoons vegetable or coconut oil
3-4 tablespoons raw honey
In a large skillet over medium heat, heat the vegetable or coconut oil and add diced pumpkin and sliced onion.
Cook for about 5-7 minutes, stirring occasionally, being careful not to crush the pumpkin cubes.
Stir in the honey, prunes and raisins.
Reduce the heat to medium-low and cook, covered for 15-20 minutes, stirring occasionally.
