2 big or 4 medium potatoes, washed and peeled
1/2 small onion
2 tablespoons all purpose flour
Pink salt and pepper to taste
Cooking oil spray (for waffle iron)
In a food processor or on a box grater, coarsely shred the potatoes and onion.
Add flour, egg and stir into the potato-onion mixture.
Season with salt and pepper.
Heat your waffle iron to high heat. Once hot, coat lightly with a cooking spray.
Heap some latke mixture on top and spread it into an even layer.
Cook until deep golden brown.
Serve with sour cream or plain Greek Yogurt.
