Assemble this dish at least two hours before you wish to serve it, so that the zucchini has time to soften and soak up the marinade.
PREPARATION: 20 min
3 medium zucchini
3 tablespoons freshly squeezed lemon juice or apple vinegar
2 tablespoons extra virgin olive oil
1 tablespoon raw honey
1-2 garlic clove, pressed
3-4 tablespoons finely chopped parsley or dill
Salt and freshly ground pepper to taste
Slice the squash as thinly as you can, I use a vegetable slicer.
Mix together the lemon juice/vinegar, garlic, parsley/dill and olive oil.
Toss with the zucchini.
Season with salt and pepper.
Cover and refrigerate for 2-4 hours.
