3 cups shelled peas, fresh or frozen
4 cups water or stock
2 tablespoons unsalted butter
2-3 pressed garlic cloves
pink salt and freshly ground pepper to taste
Low fat plain Greek Yogurt or Sour Cream and Feta cheese (crumbled) to serve
Melt the butter in a large saucepan over medium heat, add garlic and cook and stir for 1 minute.
Pour in the water and peas.
Season to taste with salt and pepper, and bring to a boil.
Reduce heat to low, cover and simmer until the peas are tender, 15 to 20 minutes.
Puree peas in a blender or food processor in batches.
Serve with Greek Yogurt or Sour Cream and Feta cheese sprinkled on top.
