7-8 medium raw potatoes, grated
1 big onion, chopped
2 tablespoon all purpose flour
1 cup chopped smoked bacon
2 cups chopped mushrooms
1/2 teaspoon pink salt
Sautee bacon, onion and mushrooms until well browned (about 15 minutes).
Grate the potatoes then place in a clean tea towel and wring out the excess moisture.
Preheat oven to 450 F.
Add prepared bacon, mushrooms and onions to the grated potatoes and stir in the egg and flour (Save some bacon mixture for later).
Season with salt.
Put the mixture in a greased baking dish and bake at 450 F for 40-45 minutes.
Spoon the rest of bacon-onion-mushroom mixture over the top and serve with sour cream.
