Ricotta Whipped Cream with Cherries and Walnuts.

1/2 cup whole-milk ricotta cheese
1/2 cup heavy whipping cream
1 tablespoon granulated sugar
1 vanilla bean, scraped or 1 tsp vanilla extract
1 cup fresh cherries, pitted
1/2 cup walnuts, coarsely chopped
In a medium bowl, using a balloon whisk or a handheld mixer on medium-high speed, beat the whipping cream with sugar until soft peaks form.
Using the spatula, gently fold the ricotta cheese and vanilla into whipped cream mixture until blended.
Cover and refrigerate for at least 2 hours or up to 24 hours to let the flavors meld.
Prepare 2 1-cup glass bowls or goblets.
Spoon the ricotta mixture into the bowls, dividing it evenly.
Add cherries and walnuts and serve immediately.
