Fresh turkey breast, on the bone, rinsed and patted dry (about 6 pounds)
2 cups prunes, rinsed
8-10 garlic cloves, peeled and quartered
3-5 tablespoons vegetable oil
1 tablespoon pink salt
1 tablespoon freshly ground pepper
Heat oven to 425F.
Using a sharp knife, make cuts and put inside the meat whole prunes and pieces of garlic.
Mix together the vegetable oil, salt and pepper and spread all over the meat.
Place turkey, breast side up, on a rack in a large shallow roasting pan, cover with foil and bake for 2 hours.
Uncover and roast for another 20-30 minutes until golden brown.
Transfer turkey to a cutting board and let stand 15 minutes before carving.
