Melt-in-Your-Mouth Baked Salmon Fillets with Capers.

4 salmon fillets
1 cup low fat Greek yogurt
1/2 cup ketchup or tomato sauce
2 teaspoons capers
Pink salt and ground pepper to taste
lemon wedges for garnish
Wash salmon fillets well under cold water then pat dry using paper towels.
In a medium bowl mix together Greek yogurt with ketchup and capers until combined, season with salt and pepper.
Place the salmon fillets in a greased baking dish (skin-side down),
Using a spoon coat all sides of salmon fillets with the yogurt mixture (make sure to coat the fillets generously).
Set heat to 425 convection-bake (must use a hot oven).
Bake the salmon (uncovered) for 15 minutes or until cooked (do not turn the salmon, the cooking time will vary depending on the size of your fillets).
Serve the cooked fillets with lemon wedges.
