1 package frozen seafood blend (I used trader joe's)
1 1/2 cups organic basmati rice
1 big chopped onion
3-4 big shredded carrots
1 red or yellow sliced pepper
1/2 cup dried cranberries
2-3 tablespoons butter
3 cups water
1 lemon, sliced
Pink salt and freshly ground pepper to taste.
Press ‘Saute’ to preheat the Instant Pot, and when the words ‘Hot’ appear on the display, add the butter to the pan.
Cook and stir the onion, carrots and sliced pepper for about 5-7 minutes.
Stir in the rice, dried cranerries and seafood blend (frozen), season well, add 3 cups of water.
Press the ‘Rice’ cooking button, and seal the lid.
Sprinkle with lemon juice just before serving.
