1 red pepper, chopped
1 onion, chopped
4 ripe tomatoes, chopped
2-3 garlic cloves, sliced
2 tablespoons tomato sauce
2 tablespoons olive oil
1/2 cup chopped parsley
1/2 cup crumbled Feta cheese (optional)
Oregano, Cayenne, Salt and Pepper to taste
Heat olive oil in a deep skillet over medium heat.
Stir in the garlic, onion and red pepper.
Cook and stir for 5 minutes.
Add fresh tomatoes and tomato sauce.
Simmer, stirring occasionally, until thickened slightly, about 15 minutes.
Season sauce with salt, pepper and spices.
Gently crack eggs into skillet over tomatoes.
Cook the eggs until the whites are firm and the yolks have thickened but are not hard.
Sprinkle with the parsley and crumbled feta.
Serve right away with fresh bread,
