4-5 slices smoked salmon
1 cup pea shoots
1 cup cherry tomatoes
1/2 cup small mozzarella balls
1/2 lemon, juiced
1 tablespoon olive oil
Pink salt and freshly ground pepper
1 teaspoon balsamic vinegar or balsamic reduction
Place salmon slices in a single layer on a large plate.
Spread pea shoots, tomatoes and mozzarella balls on top.
Season with salt and pepper to taste.
Drizzle with olive oil and lime juice and finish with balsamic vinegar or balsamic reduction.
Serve with sliced bread.
