Solyanka. Russian Sweet and Sour Meat Soup...

2 cups diced beef or pork
1 cup diced chicken
2 cups diced smoked ham or bacon
1 cup dieced kielbsa or smoked sausage
1 big chopped onion
2 cups cubed dill pickles
1/2 cup dill pickle juice
1 1/2 cup ketchup or tomato sauce
3 tablespoons vegetable oil or butter
2 bay leaves
12 cups water
Salt and freshly ground pepper to taste
Olives, sour cream and lemon slices for garnish
In a large pot of water, drop your uncooked meat.
Bring to a boil and skim all the foam that forms on top during this process. Boil gently, uncovered, about 20 minutes.
Meanwhile preheat a pan with oil or butter. Add onion, cook and stir until transparent, but not browned.
Add pickled cucumbers and tomato paste or ketchup and mix well. Cook for another 5 minutes.
Put pickle-onion-ketchup mixture in the hot stock.
Add all sorts of smoked meat you have prepared, pickle juice and bay leaves. Season with salt and pepper to taste.
Simmer, covered about 15-20 minutes.
Turn off the heat, close the pan with a lid and leave it for 20 minutes.
Serve with a dollop of sour cream, lemon slices, olives and parsley or dill.
