2 medium potatoes, washed, boiled and peeled
2 medium beets, washed, boiled and peeled
1 cup fresh or canned green peas
1 cup chopped kimchi
1/4 cup chopped leeks
1/4 cup extra virgin olive oil
Pink salt and black pepper to taste
Cut the potatoes and beets into small even cubes.
In a large bowl combine beets, potatoes, kimchi, peas and leeks.
Drizzle extra virgin oil and mix well.
Season with salt and pepper to taste.
