4 medium carrots, grated into long, thin strands
1 garlic clove, pressed
1 medium onion, finely diced
1 teaspoon coriander seeds, crushed
1 teaspoon vinegar
3 tablespoons vegetable oil
1 tablespoon sugar
1 tablespoon salt
Pinch of cayenne pepper
In a small pan, over medium heat, cook and stir onion until soft and golden (about 5-6 minutes).
Remove from heat and set aside.
In a large mixing bowl, mix all ingredients together with onion.
Cover the bowl with a piece of plastic wrap and refrigerate for 2-3 hours before serving.
Serve as a side dish.
