Super Easy Pancakes. Delicious, light and fluffy...

1 cup all purpose flour
1 cup milk
1 ripe banana, grated (optional)
2 tablespoons vegetable oil
3 tablespoons sugar
1/2 tablespoons pink salt
1 tablespoon baking powder
Cooking spray (I use coconut oil)
In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.
In a medium bowl, whisk together milk, banana, egg and vegetable oil.
Add dry ingredients to milk mixture; stir gently, just enough to moisten the dry ingredients.
Mix the batter and let it rest in the refrigerator for several minutes.
Heat a large skillet (nonstick or cast-iron) or griddle over medium heat.
Lightly coat the hot pan with cooking spray,
Spoon about 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round.
Cook until surface of pancakes have some bubbles about 1 to 2 minutes.
Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more.
Continue with more oil and remaining batter.
Serve warm, with desired toppings.
