2 big tomatoes, chopped
6-8 quail eggs, cooked and peeled
1 cup chopped marinated mozzarella cheese
1/3 cup chopped fresh basil
1/3 cup dried tomatoes (optional)
Pink salt and freshly ground pepper
2 tablespoons raw shelled hemp seeds
2 tablespoons olive oil
1 tablespoon balsamic reduction or balsamic vinegar
In a small bowl, combine olive oil, balsamic reduction/vinegar and hemp seeds. Mix well.
In a medium bowl, mix together fresh and dried tomatoes, mozzarella cheese, basil and quail eggs.
Season with salt and pepper.
Drizzle with hemp seed vinaigrette and serve at room temperature.
