4-6 turkey or chicken cutlets
1/2 cup white whole wheat flour or all purpose flour
1/2 cup grated parmesan cheese
3-5 tablespoons olive oil
4-6 lemon slices
1/2 tablespoon or to taste pink salt
1/2 tablespoon or to taste freshly ground pepper
Place the meat cutlets between two sheets of plastic wrap and pound them until just 1/4 inch thick with the flat side of a meat tenderizer.
Beat eggs in a shallow bowl with salt and pepper.
In a separate shallow bowl, combine flour and parmesan cheese. Mix well.
Heat olive oil in in a large non-stick skillet over med-high heat.
Dip each cutlet into egg mixture to coat completely, then dredge in flour-parmesan mixture.
Cook cutlets until golden brown and cooked through, about 3-5 minutes per side.
Garnish with parsley and lemon slices.
