2 slices whole grain bread
1 ripe avocado
1/2 cup plain Greek yogurt or sour cream
2 Portobello mushroom, sliced
2 cloves garlic, minced
2-3 tablespoons chopped chives
2-3 tablespoons vegetable oil
Pink salt and freshly ground black pepper
Remove gills from mushrooms with spoon and cut into thick slices.
In a medium skillet heat oil over moderate heat and cook mushrooms until softened about 10 minutes.
Add garlic; cook and stir about 5 minutes.
Blend avocado with Greek yogurt or sour cream, season with salt and pepper.
Toast the bread until golden brown.
Top toasted bread with Avocado Spread and Sauteed mushrooms.
Garnish with chives.
